Comforting Lentils & Sweet Potatoes Soup:


  • 1/4 cup coconut oil (or extra virgin olive oil)
  • 1 medium onion, diced
  • 2 tomatoes, diced
  • 1 tsp minced fresh ginger
  • 1 &1/2 tsp turmeric
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 to 1 tsp ground cinnamon
  • 1/8 tsp cayenne
  • 2-3 medium sweet potatoes, peeled (if non organic) and cut into cubes
  • 2-4 carrots, cut into pieces
  • 1-2 stalks of celery, cut into small pieces
  • 7 cups vegetable broth
  • 1 cup brown or red lentil
  • Some sea salt (to taste)

How to:

Heat up the oil over medium fire in a large and deep pot. Add the onion and cook, stirring frequently for 2 min, or until onion starts to soften. Stir in the tomatoes and ginger and cook for 3 min. Add in the spices and a pinch of salt. Cook and stir for 2 min. Add the sweet potatoes, broth, and lentils. Stir well, and bring to a boil over high heat. When the mixture comes to a boil, reduce the heat, cover, and simmer for 40 min or until the lentils and sweet potatoes are soft. As an option: feel free to purée (blend) some of the sweet potatoes and lentils for a smoother and creamier result.

This soup is delicious on its own or with some toasted sourdough bread or brown rice.
