Comforting Lentils & Sweet Potatoes Soup:
- 1/4 cup coconut oil (or extra virgin olive oil)
- 1 medium onion, diced
- 2 tomatoes, diced
- 1 tsp minced fresh ginger
- 1 &1/2 tsp turmeric
- 1 tsp cumin
- 1 tsp ground coriander
- 1/2 to 1 tsp ground cinnamon
- 1/8 tsp cayenne
- 2-3 medium sweet potatoes, peeled (if non organic) and cut into cubes
- 2-4 carrots, cut into pieces
- 1-2 stalks of celery, cut into small pieces
- 7 cups vegetable broth
- 1 cup brown or red lentil
- Some sea salt (to taste)
Heat up the oil over medium fire in a large and deep pot. Add the onion and cook, stirring frequently for 2 min, or until onion starts to soften. Stir in the tomatoes and ginger and cook for 3 min. Add in the spices and a pinch of salt. Cook and stir for 2 min. Add the sweet potatoes, broth, and lentils. Stir well, and bring to a boil over high heat. When the mixture comes to a boil, reduce the heat, cover, and simmer for 40 min or until the lentils and sweet potatoes are soft. As an option: feel free to purée (blend) some of the sweet potatoes and lentils for a smoother and creamier result.
This soup is delicious on its own or with some toasted sourdough bread or brown rice.
